What Have You Been Reading?

Most people ask what are you reading and for me that could be anything and everything. At the moment I am reading Writing The Paranormal Novel. This is not only interesting but also helpful for what I am writing, yes I have started writing my book and yes it will have some paranormal in it, after all I am a paranormal investigator.

How many have you heard from someone else that if they can’t do something then it can’t be real? How many of you have told someone who you were writing a book only to get just a silent look? How many of those people been someone who really cared about and only wanted to hear you can do this? I have had these things happen to me. Does it bother me, yes, yes, and yes! It really is hard knowing who to trust and to know who can and will help you. It really is nice to have someone who you can talk to that will really listen, they may not like what you are telling them or what you are writing about but at least they have an open mind and can be honest enough to tell you what needs work and also help you that as well.

How many of you have been around friends, family or even co-workers who pretend like everything is ok but you know different? How about a friend that is in a relationship and 1 of them really doesn’t have a clue about the other not because they don’t have the opportunity but because watching tv is more important to them, laughing is more important to them at the end of the day then the person they are with. What about the person that tells you everything that you want to hear and then let’s say you move in together and they stop doing the things that they did in the beginning and all the things that they told you that they liked, all lies, the things that they don’t believe in doing, they do and worse, yes they do lie.

Ok, enough ranting!

I want to leave you all with something positive, visualize yourself doing what you love and focus on it being a success.

Mini Cannoli Cream Pastry Cups

Filling

1 container (15 oz) whole-milk ricotta cheese

1/2 cup powdered sugar

2 tablespoons granulated sugar

1/2 teaspoon vanilla

Cups

1 box Pillsbury® refrigerated pie crusts, softened as directed on box

3 tablespoons turbinado sugar (raw sugar) (I plan on using splenda)

1 teaspoon ground cinnamon

Garnish

1/4 cup miniature semisweet chocolate chips

Additional powdered sugar

  • 1 In large bowl, beat all filling ingredients with electric mixer on medium speed until creamy. Place filling in 1-gallon resealable food-storage plastic bag; refrigerate while making cups.
  • 2 Heat oven to 425°F. On lightly floured work surface, unroll pie crusts. Sprinkle each crust with turbinado sugar and cinnamon. Lightly roll rolling-pin over sugar and cinnamon to press into pastry. With 2 1/2- to 3-inch round cutter, cut out pastry rounds. Lightly press each pastry round into ungreased mini muffin cup.
  • 3 Bake about 10 minutes or until pastry cups are golden brown. Cool completely in pans, about 15 minutes. Remove from muffin cups to cooling racks.

4 Just before serving, remove filling from refrigerator. Cut 1 bottom corner off bag; pipe scant tablespoon filling into cooled pastry cups. Sprinkle with chocolate chips and powdered sugar. Serve immediately. Store any remaining pastry cups at room temperature and filling in refrigerator.
